Easy Chile sauce

Serves: 1 quart
Ingredients
  • 4 cups dried chiles, seeded and stemmed
  • ½ cup roughly chopped yellow onion
  • ¼ tsp roughly chopped garlic
  • ¼ tsp ground dried coriander
Instructions
  1. Toast chiles in dry skillet until fragrant and slightly darkened
  2. Fill a large saucepan with water and bring to a boil
  3. Remove from heat and add chiles
  4. Soak for 15-20 minutes until soft and pliable
  5. Place in blender with onion, garlic and coriander
  6. Blend until smooth
