Ingredients
  • 8 oz fresh goat cheese, softened
  • 1 lemon
  • 10, ½ inch slices baguette or country loaf sliced and halved
  • 3 medium zucchini
  • Olive Oil
  • salt/pepper
Instructions
  1. Zest and then slice the lemon into wedges
  2. Combine the lemon zest with the softened goat cheese
  3. Preheat oven to 400 degrees
  4. Place the bread slices on a sheet tray and spray or coat with oil
  5. Bake for 8 minutes or until lightly browned and crispy on top
  6. Spread toasts with goat cheese mixture
  7. Heat a skillet over medium/high heat and spray liberally with olive oil spray or coat with 1 TBL of olive oil
  8. When hot, add zucchini strips in a single layer. Slightly overlapping is ok.
  9. Lightly sprinkle with salt and pepper if desired
  10. Cook until browned and slightly charred in places.
  11. Top toasts with cooked zucchini and a squeeze of lemon.
  12. Serve warm
