Lemon, Basil and pink peppercorn marinated tofu

Ingredients
  • 1 12 oz block of tofu, water pressed out
  • Zest and juice of 2 lemons
  • ¼ tsp salt
  • 2 tsp pink pepper corns
  • ½ cup torn basil
  • ½ cup olive oil
Instructions
  1. Press tofu for at least 30 minutes wrapped in kitchen towels and by placing a heavy pan or plate with cans or jars on top
  2. Whisk remaining ingredients together in a medium bowl
  3. Cube tofu and place into the marinade
  4. let sit at room temperature for 30 minutes tossing occasionally. (dressing will not completely cover the tofu.
  5. Will keep for at least a week in the fridge.
