Banana Oat Pancakes

Ingredients
  • 2 large bananas
  • ½ cup kefir, goat if you can find it, or ½ cup almond or buttermilk
  • 3 eggs
  • 1 Tbl honey
  • 1½ cups rolled oats (not instant or steel cut)
  • 1½ tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp kosher salt
Instructions
  1. Place all ingredients in blender, in order listed
  2. Blend until smooth, 2 - 3 minutes
  3. Preheat griddle or pan on medium-low
  4. Spray pan with cooking spray, or brush with melted butter
  5. Pour ⅓ cup of batter for each pancake into pan
  6. Cook on first side for approximately 2 minutes until bubbles form on top, and edges are slightly dry
  7. Flip and cook an additional 1-2 minutes until golden brown and cooked through
