Banana Oat Pancakes

- 2 large bananas
- ½ cup kefir, goat if you can find it, or ½ cup almond or buttermilk
- 3 eggs
- 1 Tbl honey
- 1½ cups rolled oats (not instant or steel cut)
- 1½ tsp baking powder
- ½ tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp kosher salt
- Place all ingredients in blender, in order listed
- Blend until smooth, 2 - 3 minutes
- Preheat griddle or pan on medium-low
- Spray pan with cooking spray, or brush with melted butter
- Pour ⅓ cup of batter for each pancake into pan
- Cook on first side for approximately 2 minutes until bubbles form on top, and edges are slightly dry
- Flip and cook an additional 1-2 minutes until golden brown and cooked through
